* Sea bass filet with langoustine fusion, tricolored vegetable bonbons and beet purée
* Lemon grivé sabot with basil
* Ballottine de la reine de dinde aromatisée aux prunes, dattes et pistaches , jus de cuisson relevé au chocolat , pomme Williams aux flocons de maïs & purée de potiron à l'orange.
* Buche de Noël with chocolate and berries on pistachio crunch and golden truffle bouke.
